Treat Yourself With These Spooky Halloween Cookies

Halloween is hands down one of the best holidays of the year. I mean seriously, what other holiday let’s you run around in a spooky costume and demand free candy from your neighbors?

If you’re looking for the perfect treat to serve at your annual Halloween party this year, look no further. I recently decided to ditch the boring old bowl of fun-sized Kit Kats for an upgraded Halloween treat.

Take a look at these spooky cut-out Halloween cookies.

To make these scary-looking sweets, I used a simple roll-out sugar cookie recipe and royal icing.

For the cookie dough, simply cream together 1 cup of butter and 1 cup of sugar in a large mixing bowl. Then, add in 1 egg and 1 teaspoon of vanilla extract.

Next, stir together 2 and 2/3 cups of sifted flour, 1/8 teaspoon of salt, and 1 teaspoon of cinnamon. Add the dry ingredients to the mixture and beat until everything is evenly combined.

Cover the dough in plastic wrap and chill for at least one hour in the refrigerator.

When you’re ready to start baking, remove the dough from the refrigerator and pre-heat the oven to 400°F. On a well-floured surface, roll dough to 1/8-inch thickness and use cookie cutters to cut the dough into fun Halloween shapes.

Place the cut-outs on baking sheet lined with parchment paper. Then bake in the over for approximately 6-7 minutes, or until the cookies are golden-brown in color. Take the cookies out of the oven and set aside on a wire rack to cool.

While the cookies are cooling, you can get started on the royal icing. To make the icing, whisk 2 tbsp meringue powder with 1/4 cup cold water until it forms a slight foam.

Then, add in 4 cups of powdered sugar and 1 tsp of vanilla extract. Mix on medium-speed until icing becomes light and fluffy. Add more water, 1 tbsp at a time, until the desired consistency is reached.

Divide the icing into several bowls and mix in food coloring. Then place your icing into piping bags and start decorating your spooky Halloween cookies!
